Der Hahn is a cock, as in rooster. That's a plural form with the umlaut.

The Vietnamese called American soldiers Roosters (I believe) during the Vietnam Conflict, does it refer to that? Or is this an actual German saying? (as in English's random animal-curses ex. bullshit or horse's ass)

Yes. But the german word 'Hahn' is masculine (i.e. "rooster"). German for 'hen' is "Henne"
