I know it's not exactly a pie, but I've eaten a quish for breakfast before and that is just eggs baked into a pie crust.
I'd imagine that this dates back to the colonial period when the anything and everthing was backed into a coffin (the old version of a pie pan) in the New England area, rather similar to the way the Cornish would bake anything into a pasty. This is just a guess of course, but maybe the tradition stayed on in parts of Vermont
